INGREDIENTS

  • 6 Persian cucumbers, washed
  • 1 tsp fresh dill, chopped
  • ¼ red onion, thinly sliced

Apple Cider Vinaigrette:

  • ¼ cup apple cider vinegar
  • 1/8 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 garlic clove, minced
  • ¼ tsp sea or pink salt
  • ¼ tsp black pepper

 

INSTRUCTIONS

Using a mandolin, slice cucumbers very thin into a large bowl. Stir in dill and red onions. Mix dressing ingredients in a jar with a lid and shake until combined. Pour over salad and toss. Cover and refrigerate for 30 minutes before serving. Serves 4
