This delicious dairy-free peach ice-cream recipe is made with ripe, organic peaches, coconut milk and honey. You may want to double the recipe to share with friends or freeze for later. Top with fresh organic blackberries and coconut meat. Enjoy!
- 4 cups organic yellow peaches, sliced and frozen
- ¼ cup + 2 tbsp coconut milk
- 1 tbsp organic honey
- Blackberries, for topping (organic)
- Coconut meat, for topping (organic)
In a food processor, place peaches and ¼ cup coconut milk and pulse until blended. Add the additional 2 tbsp if needed to get an even creamier consistency. Add honey and pulse again. Remove blade and place in freezer for 10 minutes. Using an ice cream scoop, scoop out individual portions into your bowls. Top with some blackberries and coconut meat. Serve cold!
