Like smoothies and green juices, soups are a great way to pack a lot of nutrients into one meal!

This particular Broccoli and Butternut Squash Soup is especially dense with vitamins and minerals. It’s high in potassium, is loaded with vitamin A, and includes half your daily dose of vitamin c.

Its also a great source of fiber and sulforaphane, the compound found in cruciferous vegetables that helps promote detoxification.

INGREDIENTS

  • 1 Tbsp. avocado oil
  • ½ yellow onion, chopped
  • 3 cloves garlic, pressed or minced
  • 1 Tbsp. tapioca flour
  • 4 cups broccoli florets (organic)
  • 1 ½ cups butternut squash, cubed
  • 4 cups chicken broth (gluten-free)
  • 1 ½ cup coconut cream
  • 1 cup carrots, shredded
  • Sea or pink salt and black pepper, to taste
  • ½ cup cooked bacon, chopped (nitrate free)

INSTRUCTIONS

In a large stock pot or Dutch Oven over medium heat, add avocado oil until hot. Stir in onion and cook for 4 minutes or until softened. Stir in garlic and cook another minute more. Add in tapioca flour and cook another minute.

Add broccoli, butternut squash and half of the carrots (1/2 cup) cover with chicken broth. Bring to a simmer on low heat and cover for 20 minutes. With an immersion blender, blend up soup until no large pieces remain.

Stir in coconut cream and add in the rest of the carrots. Simmer uncovered for another 5 minutes. Season to taste with salt and pepper. Top with roasted broccoli, carrots, and bacon, if desired.
