Salmon is rich in the omega-3 fatty acids EPA & DHA. These fatty acids have a multitude of health benefits including decreasing inflammation, lowering blood pressure, and improving arterial function. In addition to omegas, this recipe is packed with protein, nutritious vegetables and topped with a tangy dressing.
INGREDIENTS
- 1 head of live butter lettuce
- 2 filets wild caught salmon
- 1 tsp salt
- 1 tsp pepper
- 1 tsp olive oil
- 1 carrot, sliced thin
- 1 cup cabbage, sliced thin
- ½ cup purple cabbage, sliced thin
- 1 avocado, sliced
Season salmon filets with salt and pepper then cook in a pan with the heated olive oil. Continue to cook both sides until slightly crispy. Remove skin (if there is any) and set aside. Construct wraps by laying a big piece of butter lettuce down then layer with cabbages, carrots and avocado.
Cut salmon filets in half lengthwise so that you can make 4 wraps. Season with additional salt and pepper if desired.
Top with Green Goddess Dressing (recipe below).
Green Goddess Dressing
INGREDIENTS
- 1/2 avocado
- 1/4 cup chopped cilantro
- 1 lemon, juiced
- 1 garlic clove
- 3 tbsp olive oil
- Salt and pepper, to taste
INSTRUCTIONS
Blend ingredients and drizzle over salmon.
