Creamy and delicious roasted tomato and garlic soup is a perfect dish for lunch or dinner during cooler temps. This is one of those surprisingly easy recipes that you’ll want to save and share. The roasted garlic and tomatoes make this super flavorful. Gluten-free, dairy-free, paleo and keto friendly. Enjoy!

INGREDIENTS

  • 1 lb roma tomatoes, halved (organic)
  • 2 heads of garlic
  • 2 tbsp extra virgin olive oil
  • 1 medium white onion, diced
  • 1 28oz can San Marzano tomatoes, peeled
  • ¼ cup fresh basil (organic)
  • 3 cups chicken broth (organic, gluten-free)
  • ¼ cup unsweetened coconut milk
  • ½ tsp Italian seasoning
  • Sea or pink salt and pepper to taste

 

INSTRUCTIONS

Preheat oven to 400F. Cut tops off of garlic then place foil inside a small baking dish. Add garlic heads and drizzle with 1 tbsp olive oil. Wrap in foil and place in oven. In a separate baking dish, line up roma tomatoes, cut side up and drizzle with another 1 tbsp olive oil. Place in oven and set timer for 30 minutes. Remove garlic and check tomatoes. If you want a char, broil for a few minutes then remove from heat.

Heat a large Dutch oven or pot over medium heat. Add a drizzle of oil then add onion. Cook until translucent. Add in Roma tomatoes and squeeze out garlic cloves into the soup pot. Stir in canned tomatoes, basil, and chicken broth. Bring to a boil then simmer on low for 15 minutes. Using an immersion blender, blend until smooth. Stir in coconut milk and seasonings. Serve with zucchini fritters.
