A great alternative to hash browns, serve these delicious Cauliflower and Chive Fritters for breakfast, lunch, side dish or as a snack.

Gluten-free, dairy-free, paleo and keto-friendly, Cauliflower and Chive Fritters are low-carb, nutritious and super easy to make.

Cauliflower is one of my favorite vegetables for it’s numerous nutritional benefits. It’s rich in vitamins C, K, B6, folate, potassium and manganese, it is an excellent source of fiber, and it contains protein, niacin, magnesium and phosphorus.

Cauliflower contains sulforaphane, a sulfur-containing compound found in all cruciferous (Brassica family) vegetables (like broccoli, cabbage and brussels sprouts) that support detoxification. Read more about the benefits of sulforaphane here.

INGREDIENTS

  • 1 head organic cauliflower, cut into florets
  • 2 eggs, whisked (pasture-raised, organic)
  • ½ cup almond flour
  • 1 tsp sea or pink salt
  • 1 tsp cracked pepper
  • 1 Tbsp. fresh chives, finely chopped
  • Extra virgin olive oil, for frying

 

Paleo Ranch Dressing:

  • ½ cup paleo mayonnaise
  • 3 Tbsp. coconut milk
  • 1 tsp apple cider vinegar
  • ½ Tbsp. fresh organic dill, chopped
  • 1/8 tsp. onion powder
  • 1/8 tsp. garlic powder
  • 1 pinch sea or pink salt and pepper

 

INSTRUCTIONS

Bring a large pot of water to a boil, add cauliflower florets and cook in a rumbling boil for about 6-7 minutes or until fork tender. Drain well and set aside to cool slightly. Place cauliflower in a large bowl and mash with a potato masher until creamy but still a little chunky. Add eggs and almond flour and mix thoroughly. Stir in salt, pepper and chives. Heat skillet over medium high heat then add oil. Form batter into patties and fry on each side until golden brown. Add to a wire rack with a paper towel underneath.

Serve with paleo ranch!
