Ground turkey has a lower saturated fat content than ground beef, making it a heart healthy choice. This recipe is also paleo, keto and whole-30 friendly. Enjoy! Serves 2
INGREDIENTS
- 1 lb ground turkey (organic)
- ½ yellow onion, diced
- 1 tbsp avocado oil
- 4 cauliflower or paleo-friendly tortillas (I love the almond Siete brand)
- 1 cup kale, chopped (organic)
- 1 avocado, cubed
- 1 roma tomato, chopped (organic)
- 1 tbsp fresh cilantro, chopped
- 1 lime, for serving
Taco Seasoning:
- 3 tsp chili powder
- 1 tsp ground cumin
- ½ tsp sea or pink salt
- ¼ tsp garlic powder
- ¼ tsp paprika
INSTRUCTIONS
Place all taco seasoning ingredients in a small bowl and mix. Set aside.
Heat oil in a skillet over medium heat. Add onion and sauté until translucent, about 5-6 minutes. Add turkey and cook until browned, breaking it apart to resemble cooked ground beef. Drain fat then return back to heat. Sprinkle in taco seasoning and 1 tbsp of water. Continue to cook until water is evaporated. Set turkey aside. Heat tortillas in oil or over a flame on both sides. Fill with turkey meat, kale, avocado, tomato, cilantro and serve with limes.
