While I typically recommend limiting starchy vegetables like sweet potatoes, they’re lower on the glycemic index than their white counterpart and higher in fiber as well! In moderation, they can be a great treat which can help you stick to a paleo diet!
INGREDIENTS
- 1 sweet potato, sliced into 1 inch thick rounds
- 1/2 lb lean ground beef
- 1 egg
- 1 tsp salt
- 1 tsp onion powder
- 1/2 avocado, sliced
- Pico de gallo (diced white onions, diced tomato and cilantro)
INSTRUCTIONS
Preheat oven to 375F. Add sliced sweet potato to a non-stick baking sheet. Bake for 8-10 minutes or until soft. In a bowl, mix together beef, egg, salt, and onion powder. Form small beef patties and heat in a skillet until brown on both sides. Add to your sweet potato slices then top with avocado and pico de gallo.
