Even if you are not a big zucchini fan, you will love these. Zucchini is a member of the squash family and is actually a fruit, not a vegetable. Its packed with nutrients, antioxidants, and fiber. It also contains a compound called zeaxanthin, which plays a role in lowering oxidative stress.

- 2 medium organic zucchinis (green)
- 1 egg, beaten
- ¼ cup coconut flour
- 1 tsp salt
- 1 tsp pepper
- 3 tbsp avocado oil
Grate zucchini over a colander. Press down to drain as much liquid as you can. Transfer to a bowl and add egg, coconut flour, salt and pepper. Mix together. Heat a skillet with avocado oil then add a scoop of batter. Continue to cook until each side is golden brown. Continue with the rest of the batter.
