Enjoy these for a “southern-style” treat with a big green salad. Why wild-caught salmon? They have a completely different diet and environment than farm-raised salmon, resulting in better nutrition and fewer contaminants.

INGREDIENTS:

  • 2 wild caught salmon filet portions
  • 2 eggs
  • 1/4 + 1 tbsp coconut flour
  • 1/2 tbsp chives, chopped
  • 1 garlic clove, minced
  • 1 1/2 tsp salt
  • 1 tsp lemon pepper
  • 1 tbsp lemon juice
  • 1 tbsp coconut oil

Paleo Ranch Dressing:

  • 1/4 cup mayonnaise (paleo friendly)
  • 2 tbsp coconut milk
  • 1/2 tsp parsley, chopped
  • 1/2 tsp dill, chopped
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp onion powder

INSTRUCTIONS:

Preheat oven to 375F. Bake salmon portions on a baking sheet until cooked through. In a bowl, break apart salmon with a fork then stir in remaining ingredients until mixed through. Heat a skillet over medium heat then add coconut oil. Create patties with the salmon mixture then heat in the skillet until browned on both sides. In a small bowl, combine the dressing ingredients and serve with fritters.
