What a special treat!

Paleo hot chocolate with homemade marshmallows. Dairy-free, gluten-free and paleo, this is one recipe that everyone will enjoy. Save and make it a new holiday tradition.

Hot Cocoa

INGREDIENTS:

  • 2 cups almond milk (or nut milk of your choice)
  • 2 tbsp cacao or cocoa powder (unsweetened)
  • 2 tbsp maple syrup
  • Pinch of sea salt

 

INSTRUCTIONS

Combine all ingredients in a saucepan over medium/high heat then whisk together until smooth. Pour into two mugs.

 

Paleo Marshmallows

INGREDIENTS:

  • 1 tbsp arrowroot powder
  • 1/2 cup cold water
  • 3 tablespoons gelatin preferably grass-fed
  • 2/3 cup water
  • 1 cup for xylitol or honey
  • 1/4 teaspoon kosher salt
  • 2 teaspoons vanilla extract

 

INSTRUCTIONS:

Measure out all your ingredients before beginning. Line an 8X8 or 9X9 baking dish with parchment then sprinkle with arrowroot powder. Set aside.

In a bowl fitted in a stand mixer, add cold water then sprinkle gelatin on top. Mix well with a fork and allow to bloom for 10 minutes. Meanwhile pour the 2/3 cup water in a small saucepan and add the xylitol or honey in the center. Heat on medium heat and allow to dissolve (don’t mix just swirl the saucepan until dissolved). Bring to a boil and allow to boil for exactly 2 minutes. Have your stand mixer with a whisk running while you pour in the hot mixture in a stead stream. Set a timer for 15 minutes and have your mixer running on high the entire time. About half way through add the salt then towards the end, add the vanilla. Working fast, scoop out the marshmallow batter and pour into your prepared pan in an even layer. Let set for 6 hours then cut into squares. Serves 2.
