Paleo Eggnog – Just in time for the holidays!

What Is Eggnog?

Eggnog is a sweet and creamy beverage traditionally enjoyed during the holidays. With a thick, custardy texture made of egg, cream, sugar and warm spices, it is certainly a rich and tasty treat. However, if you are following a dairy-free or paleo diet, this is not a drink that you would typically indulge in.

Well, we created a version of eggnog that you might just want to try this year. Made with dairy-free coconut milk and maple syrup, we think this simple recipe is just as delicious! Although often made with some kind of spirit, ours is alcohol free so the whole family can enjoy!

INGREDIENTS
  • 1 13.5 oz can full fat coconut milk
  • ¼ tsp ground cinnamon (organic)
  • ¼ tsp nutmeg
  • 3 tbsp maple syrup
  • 2 egg yolks (from pasture-raised, organic eggs)

Garnish:

  • Cinnamon sticks
  • Ground cinnamon
  • Anise stars

 

INSTRUCTIONS

In a saucepan on very low heat, stir in coconut milk and spices. Remove from heat and whisk in egg yolks until thickened. Cool in the refrigerator until ready to serve.
