This Paleo Chicken Fajitas recipe is made with organic chicken and a beautiful combination of colorful bell peppers. Easy to make and a truly delicious and nutritious meal for the whole family.

Gluten, dairy and grain-free.

INGREDIENTS

  • 1 tbsp avocado oil
  • 1 ½ lbs chicken breast, pounded to ¼” thickness then cut into thin strips (organic)
  • ½ green bell pepper, chopped into strips
  • ½ yellow bell pepper, chopped into strips
  • ½ orange bell pepper, chopped into strips
  • ½ red bell pepper, chopped into strips
  • ½ yellow onion, chopped into strips
  • ½ avocado, sliced
  • 1 lime, cut into wedges

 

Paleo Fajita Seasoning:

  • 2 tsp chili powder
  • 1 tsp paprika
  • ½ tsp ground cumin
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • 1 tsp sea or pink salt
  • ¼ tsp cayenne pepper

INSTRUCTIONS

Combine seasonings to make fajita seasoning and set aside.

Heat oil over medium heat in your skillet then add chicken. Sprinkle half of the fajita seasoning onto the chicken. Continue to cook until no longer pink. Add 2 tbsp water and cook again until all liquid is absorbed.

Remove chicken and add vegetables to the skillet. Sprinkle vegetables with the rest of the seasoning and cook 6 minutes or until tender. Add chicken back to the skillet and serve with lime and avocado and your favorite paleo tortillas.
