Ingredients:

1 whole cooked chicken
1 stalk celery cleaned and finely chopped
1/4 red onion finely diced
1 1/2 tbsp curry powder
1 tbsp golden raisins
1 tbsp roasted cashews, roughly chopped
1 1/4 cup paleo mayo
Dash of turmeric and ginger
Salt and pepper to taste

Directions:
1. Shred chicken into bite-size pieces
2. Chop vegetables and cashew
3. Combine chicken with mayo
4. Season mixture with spices and stir to coat evenly
5. Lastly, add cashews and raisins
