Ingredients

  • 1 can organic pumpkin
  • 1 can organic coconut milk
  • 1 1/2 cups organic vegetable or chicken broth
  • 1 medium chopped sweet onion
  • 2 Tbsp virgin olive oil
  • 2 tsp curry powder
  • 1 tsp pink salt
  • 1 tsp cinnamon
  • 1/2 tsp cardamom

Directions

Saute olive oil and onions in large saucepan until onions are translucent. Transfer to large pot. Add pumpkin, coconut milk, broth and spices. Simmer for 20 minutes. Remove from heat and blend. Serve hot. Sprinkle with a few shelled pistachios. 2-3 servings.
