Everyone loves pancakes, and now you can enjoy them on a dairy and gluten-free diet as well. Go lightly on the maple syrup if you do prefer to have some, and don’t forget the bacon!
INGREDIENTS
- Coconut Oil, for griddle
- 3 eggs
- 2 small bananas, ripe
- 1 cup almond flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- Berries, for garnish
INSTRUCTIONS
Mash bananas in a large bowl. Next, add the rest of the ingredients (sans berries). With a hand mixer, mix until batter is smooth. Heat a griddle or skillet with the coconut oil. Add pancake batter and heat on low/medium heat until brown then flip over and cook the other side. Serve with fresh berries. You can also add paleo powdered sugar (1 cup coconut sugar and 2 tsp tapioca flour blended in a blender until powdery) and/or maple syrup!
