INGREDIENTS

  • 1 cup ripe banana, mashed
  • 3 eggs (pasture-raised, organic)
  • ¼ cup coconut sugar
  • 1 tsp vanilla extract
  • 2 cups almond flour
  • ¼ cup tapioca flour + more for dusting strawberries
  • 1 tsp baking soda
  • ¼ cup coconut oil, melted
  • 1 ½ tsp lemon juice
  • 1 cup diced strawberries (organic)

 

INSTRUCTION

Preheat oven to 350F. Line a 9X5 loaf pan with parchment paper then set aside. In a large bowl, add mashed bananas, egg, vanilla extract and sugar and whisk to combine. Sift in flour, tapioca flour and baking soda and whisk again. Stir in coconut oil and lemon juice until batter is thoroughly combined. Dust diced strawberries lightly with tapioca flour in a medium bowl.

Fold in ¾ of the strawberries into the batter, reserving larger slices for the top. Bake for 55 minutes on center rack or until top is golden brown and a toothpick comes out clean from the center. Allow to cool before slicing.
