This dish is packed with nutrition and flavor. Brussels sprouts are a member of the cruciferous family of vegetables – what I consider the “rock stars” of vegetables. They have high levels of phytonutrients, vitamin A , vitamin C, folic acid and fiber. They also contain sulforaphane, an important compound that has been shown to have anti-cancer, anti-inflammatory and detoxification properties.
What makes this dish so flavorful is the homemade poppyseed dressing, and of course, the bacon. A good homemade dressing like this one also tastes great over a tossed green salad or your favorite roasted veggies.
INGREDIENTS
- 1 lb Brussels sprouts, trimmed
- ¼ cup dried blueberries
- 4 strips bacon, cooked
Poppyseed Dressing:
- ¼ cup full fat unsweetened coconut milk, stir if separated in the can
- ¼ cup olive oil
- 3 tablespoons white wine vinegar
- 1/3 cup lemon juice
- 3 tablespoons honey
- 1 teaspoon dry ground mustard
- ½ tablespoon poppy seeds
- ¼ teaspoon salt
INSTRUCTIONS
Using a food processor or mandolin, shave the Brussels sprouts to create a shredded lettuce consistency. Toss with dried blueberries. Mix all dressing ingredients in a jar with a lid. Pour on top of salad then top with bacon.
