Pumpkin Paleo Bars with a Coconut Cream Almond Butter Drizzle

Made with naturally sweet pumpkin and honey, they are a #smart splurge choice at a time when sweet temptations are in abundance. In order to stay compliant with your paleo diet, limit to one bar, savor and enjoy!

 

INGREDIENTS
1/2 cup organic pumpkin purée
1/2 cup almond butter
1/3 cup honey
2 eggs (from pasture-raised cage-free chickens)
1 tsp cinnamon
1/4 tsp ground cloves
1/2 tsp baking soda
1 pinch sea salt

 

Coconut Cream Almond Butter Drizzle:
1/4 cup almond butter
1/4 cup coconut cream
1 Tbsp. maple syrup or honey
1/4 cup almond and pecan pieces (topping)

 

INSTRUCTIONS:

Preheat oven to 350F. Mix bar ingredients together. Pour into a greased 8×8 baking dish and bake for 30 minutes.

Remove from oven and let cool. Meanwhile mix drizzle ingredients together in a small bowl. Cut your bars into 9 squares then top with drizzle and chopped nuts.
