The perfect soup for a cozy night in. Warm, full of nutrition and a very tasty and healthy take on a traditional and sometimes bland old time favorite. I love chicken soup, and the feelings of comfort and wellness that it conjures up. Make for the whole family to enjoy.

 

INGREDIENTS

  • 1 tbsp extra virgin olive oil
  • ½ yellow onion, chopped (organic)
  • 3 garlic cloves, thinly sliced
  • 3 carrots, cut into angled slices (organic)
  • 2-3 stalks celery, sliced (organic)
  • 3 tbsp tomato paste
  • 5 cups chicken broth (organic, gluten free)
  • 1 pinch red pepper flakes
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • ½ cup coconut cream or Paleo sour cream
  • 3 cups cooked chicken breast, shredded (organic)
  • 1 handful spinach (organic)
  • Fresh thyme

 

INSTRUCTIONS

In a large stockpot or dutch oven drizzle olive oil over medium heat. Add the onions and cook until translucent then add the garlic and cook until fragrant. Add carrots and celery and stir in tomato paste until mixed in. Pour in chicken broth and seasonings. Bring to a boil then cover and reduce heat to low. Allow the vegetables to soften for about 20-30 minutes. Once cooked through, stir in coconut cream, chicken and spinach. Cover and cook again until hot. Pour into bowls and serve hot with fresh thyme.
