Want to make the holidays extra special? Serve them this much healthier paleo version of the traditional green bean casserole dish. Great accompaniment to Pork Tenderloin, Honey Spiced Glazed Turkey With Paleo Gravy, or Cranberry Roasted Chicken.
- 12 oz organic, whole green beans, trimmed
- 1 tbsp extra virgin olive oil
- 6 slices nitrate-free (paleo) bacon
- 2 cloves garlic, minced
- Sea salt and pepper to taste
- Seasoned Marcona almonds or sliced almonds
Preheat oven to 350F. Heat bacon on the stovetop in a large skillet until crispy. Remove and set bacon aside on a paper towel lined plate. Reserve about a tablespoon of bacon grease in the skillet. Over medium heat, add garlic and cook briefly then toss in green beans to coat. Garnish with salt and pepper. Add green beans to an oven safe dish (or keep in oven safe skillet) and bake for 20 minutes. Add bacon to the top along with almonds and bake for another 10 minutes. Serve warm!
