As we approach the warmer months of summer, ceviche is such a perfectly light and cool dish to enjoy for lunch or dinner. This paleo and keto friendly recipe is also super easy and delicious.

Packed with protein and crisp vegetables, this is a wonderfully healthy and flavorful recipe.

INGREDIENTS

  • 1 ½ cup jumbo shrimp, cooked
  • 4 limes, juiced
  • 1 lemon, juiced
  • ½ organic red onion, diced
  • 1 avocado, cubed
  • 3 organic roma tomatoes
  • ½ organic English cucumber, cubed
  • ¼ cup cilantro, chopped
  • Pinch of sea salt, to taste

 

INSTRUCTIONS

In a bowl, combine lime juice and lemon juice. Remove tails from cooked shrimp, cut in half and place in a separate bowl. Pour half of the lime/lemon juice over the shrimp and allow to marinate covered in the fridge for 15 minutes. Remove from fridge and toss in red onion, avocado, tomatoes, cucumber and cilantro and top with remaining lemon/lime juice. Toss well and season with salt. Enjoy!
