INGREDIENTS:
- 1 large ripe banana
- 2 eggs
- 1/8 tsp baking powder, optional
Optional Toppings:
- Banana slices (organic)
- Nut butter (raw cashew butter, almond butter)
- Honey (organic)
INSTRUCTION
In a medium bowl, mash up banana well with a fork. Whisk in eggs and stir in baking powder if using. Heat up skillet over medium/low heat. Spray with coconut oil or lightly coat with a paper towel. Scoop ¼ cup of mixture into skillet. Cook for about 50 seconds each side or until golden brown. Serve with desired toppings.
