Almond Banana Bread

Gluten-free, dairy-free and delicious!

A perfect breakfast or anytime treat (#smartsplurge).

You might want to double or triple the recipe for extra loafs to freeze and enjoy later.

INGREDIENTS

  • 2 small ripe bananas (organic)
  • ½ tsp baking soda
  • 3 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • ¼ cup coconut sugar, optional
  • 1 egg (pasture-raised, organic)
  • ¾ cup almond flour
  • ½ cup tapioca flour
  • ½ tsp cinnamon
  • 1 pinch Himalayan pink or sea salt
  • 1 handful walnuts and almonds, chopped (reserve some for the top)
  • OPTIONAL – add a handful of dairy-free chocolate chips for extra deliciousness!

 

INSTRUCTIONS

Preheat oven to 350F. Brush mini loaf mans with coconut oil and set aside.

In a large bowl, mash bananas then stir in coconut oil, vanilla extract, coconut sugar and egg. Mix well until combined. Stir in flours, cinnamon and salt and mix again until incorporated. Fold in ¾ handful of the nuts, pour batter into loaf pans then top with remaining nuts.

Bake for 15-20 minutes or until toothpick comes out clean. Pop out of pans and slice.
