Looking for a delicious and nutritious paleo vegetable dish? This cool Curry Cauliflower bowl recipe may be served as a side dish or the main course. I love it because it includes one of my favorite vegetables – cauliflower!

Cauliflower is one of those perfect foods to try to include in your diet as much as possible. Its packed with vitamins C, K, B6, folate, potassium and manganese, it is an excellent source of fiber, and it contains protein, niacin, magnesium and phosphorus.

Cauliflower is also a member of the cruciferous family of vegetables, a group of vegetables that contain glucosinolates, or sulfur containing compounds that support detoxification (read more about the benefits of cruciferous vegetables here).

This particular cauliflower dish is made especially tasty with a cilantro lime dressing. Crunchy, tangy, and sure to satisfy – enjoy!

 

INGREDIENTS

  • 1 head of organic cauliflower, cut into florets
  • 1 tbsp extra virgin olive oil
  • 1 tbsp curry powder
  • 1 tsp paprika
  • 1 tsp sea or pink salt
  • ½ tsp black pepper
  • 1 cup organic romaine lettuce, chopped
  • ½ cup organic cabbage, chopped
  • ¼ cup cilantro, chopped
  • ½ avocado sliced
  • 1 persian cucumber, sliced
  • 1 lime, quartered

 

Cilantro lime dressing:

  • 2 cups cilantro
  • 2 garlic cloves
  • 6 tbsp olive oil
  • 3 tbsp lime juice
  • 1 tsp sea or pink salt
  • 1 avocado

 

INSTRUCTIONS

In a food processor, add all dressing ingredients and pulse until smooth. Add to a jar and refrigerate.

Preheat oven to 425F. In a large bowl toss cauliflower with olive oil, curry powder, paprika, salt and pepper. Line a baking sheet with parchment paper then arrange cauliflower in a single layer. Bake for 25 minutes. Remove from oven and let cool.

In a large bowl, toss lettuce with cabbage and cilantro then top with cauliflower. Add sliced avocado, cucumbers and squeezed limes. Toss and serve with cilantro lime dressing. Serves 2
