This recipe is gluten-free, dairy-free, paleo and keto friendly.
Ingredients:
  • 1 lb. chicken breast (pasture-raised, organic)
  • 1 cup celery, chopped (organic)
  • 1 green apple, cored and chopped (organic)
  • 1/2 cup chopped onion
  • 1/4 cup shredded carrots
  • 1/2 cup pecans (halved)
  • 1 cup Paleo mayonnaise*
  • Himalayan pink salt and ground pepper to taste

Directions:

Using leftover chicken or chicken that you have prepared from scratch (boiled or roasted), shred or cube the chicken into small bites.
Combine chicken, celery, apple, pecans and paleo mayonnaise together in large bowl and mix well.

Add salt and pepper to taste. Enjoy now or save in refrigerator for later!
