This delicious, dairy free, paleo broccoli soup is sure to warm you up! Broccoli is a great choice anytime, but can be especially beneficial during cold and flu season. It’s a cruciferous vegetable, a family of vegetables that contain powerful antioxidants and properties that boost your immune system and provide detoxification support. It’s also packed with vitamins and minerals like Vitamins A, C, K and folate, as well as calcium, magnesium and potassium. Enjoy!

Ingredients:

  • 6 cups organic broccoli tops
  • 1 sweet onion, chopped
  • 1 clove garlic, minced
  • 1 1/2 cups chicken or bone broth
  • 1 cup coconut milk
  • 2 Tbs extra virgin olive oil
  • 1/4 cup roasted walnuts
  • 1/2 tsp pink salt
  • 1/2 tsp pepper

Directions:

  • In a large skillet, add the oil and saute the garlic and onions until translucent – put aside
  • Boil or steam broccoli in large pot until tender, do not overcook
  • Drain the broccoli and transfer to Cuisinart or blender
  • Add the milk, broth, salt and pepper and blend until smooth
  • Top with roasted walnuts
  • Note – for thinner soup add additional 1/2 cup broth
