Besides being delicious (I am biased), blueberries contain high levels of health promoting antioxidants. Blueberries on their own are a great snack, however, if you want to use them to make a special treat, try this Blueberry Antioxidant Crumble Bar recipe, it’s gluten-free, dairy-free, and paleo friendly. Enjoy!

INGREDIENTS

  • 2 ¾ cup almond flour
  • ½ cup coconut sugar + 1 tbsp separated
  • ½ cup coconut oil
  • 2 tbsp almond butter
  • ½ cup organic blueberries
  • 1 pinch of pink or seasalt

INSTRUCTIONS

Preheat oven to 350F. Line an 8X8 baking dish with parchment paper. Mix almond flour, ½ coconut sugar, coconut oil, nut butter and salt with a fork until crumbly. Press down half of the crust in the baking dish in an even layer. Toss blueberries with 1 tbsp coconut sugar then pour over crust. Add the rest of crumbly crust dough to the top. Bake for 20-25 minutes or until top is golden brown. Allow to cool for another 20 minutes before cutting into squares.
