Carrot Cucumber Salad

If your fridge is starting to look a little bare, you can still put together this great, no-hassle side salad that can give you all of the antioxidants and veggies you need! If you’d like to serve as a main dish, add some pre-cooked chicken or shrimp.

INGREDIENTS

  • 1 1/2 cups shredded carrots
  • 1 Persian cucumber, sliced
  • 1/4 cup red cabbage, sliced
  • Avocado slices
  • Sliced almonds
  • 1 tsp salt

INSTRUCTIONS

Toss carrots and cabbage together in a bowl. Top with cucumbers, avocado, and almonds. Sprinkle with salt. Serve with Green Goddess dressing.
