Beet, Avocado and Mandarin Salad

This bright, fresh, fruity salad is delicious and easy to put together for a fast lunch or dinner. For the oranges, I recommend always using fresh fruits as a first choice, as canned food may contain plastics like PVC or BPA. Add pre-cooked chicken if you wish to make the salad more substantial.

INGREDIENTS:

  • 2 1/2 cups arugula salad
  • 1 avocado, sliced
  • Fresh clementine or orange slices, or optionally, 1 can mandarin oranges, drained
  • 2 roasted beets, cubed
  • 1/4 cup almonds

POPPYSEED DRESSING:

  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 tbsp honey
  • 1 tsp mustard
  • 1/2 tsp sea salt
  • 1/2 tbsp poppyseeds

INSTRUCTIONS:

Place arugula in two bowls and split toppings evenly between the two salads. Stir together dressing and drizzle on top! Serves 2.
